The Archive contains thouands of original menus, from restaurants, private dinners, banquets, etc. The collection spans two centuries of dining from the 19th to the 21st centuries. It is especially replete with menus relating to the 1893 Columbian Exposition in Chicago.

This banquet was part of the public relations campaign to encourage foreign countries and companies to participate in the 1893 Columbian Exposition in Chicago.
